
Sensation: Tannic Wines
"Tannins are yet another interesting element that distinguishes wine from other beverages, with the exception of traditionally made cider (which--lets be honest--is far closer to wine than beer), tannic profiles are the sole provenance of wines made from grapes. Tannins are found in skins predominately, but are also found in seeds as well as oak. A higher tannic profile provides a perceived 'astringency' or 'dry' feeling on the palate, which is incredibly useful in crafting pairings. More tannic wines are often used to cut the fat of rich proteins, which is why you see a lot of cabernet used to pair with steaks."
