"Acidity is a unique character in wine that really distinguishes itself from beer or spirits. The acidity is what provides that clean, zippy mouth watering character. Generally most wines that would be considered "crisp" or "refreshing" are on the lower end of the pH scale, meaning more acidic. Higher acidity wines are extremely useful in cutting fat, much like tannin--however its far more adept at working with fat found in cream and dairy."
