This Pinot Gris is "alive" and will continue to evolve, but for now we can say that it's like a charcuterie board in a bottle. It is bone dry and approachable with ample savory influences and soft florals. Minerality also plays a large role in the sensations of this wine, from the warm sand aromas to the briny finish. We find apple, chalk, white flowers, and fresh sweet peas on the nose; texture and acidity in the mouth with flavors of persimmons and ginger; prosciutto and dill, and the pleasant bitterness of dried orange rind and salinity on the finish.
