Winemaker Notes
The grapes were hand-harvested overnight and brought into the winery with no SO2. Minimally effective SO2 was added prior to bottling. Free SO2: 25 ppm. Residual Sugar 9.5 g/L making for an off dry style of Riesling.
Fermentation
The grapes were whole cluster pressed prior to fermentation at cool temperatures to preserve the complex aromas of the Riesling grape. Fermentation was allowed to slowly progress to its natural finishing point preserving a touch of sweetness for texture on this high acid wine.
