Winemaking Highlights
The grapes were hand-harvested in early October overnight and brought into the winery with no SO2. The grapes were then whole cluster pressed to liberate the fresh juice for primary fermentation. The fermentation occurred at cool temperatures to maximize the aromatic profile of the Sauvignon Blanc variety until we reached full dryness. The wine was aged five months in 60% completely neutral French Oak and 40% stainless steel to promote the wine's complexity of textures. No secondary fermentation was allowed to occur on this wine. Minimally effective SO2 was added prior to bottling under a Diam Origine® cork.
