Winemaking Highlights
The various batches of fruit were crushed and destemmed then fermented predominantly in static fermenters at 26oC for 5 – 7 days during which the cap was managed using aerative pumping overs before a gentle pressing. The components underwent MLF in tank before 14 months' maturation in a selection of French oak barriques (20% new) after which the blend was assembled, filtered, and bottled without any fining.
