This precocious wine is made in an intentional style from grapes harvested at optimal freshness. The juice is quickly cold-pressed off of the grape skins following the traditional techniques used in the South of France, rather than being produced as a saignée wine (juice bled out of a red wine tank as a side-product of red wine production).
