Winemaking Highlights
A mixture of plunging and pump-overs during an average of two weeks on skins. Once fermentation was complete, the wines were pressed to tank to settle overnight and then transferred to barrels to complete MLF.

100% whole berry ferments in both small open, and large, open-top concrete fermenters. Natural yeast fermentation.
