After both the Riesling and Pinot Gris fruit is gently pressed, the juice is settled separately for just 24 hours before spontaneous fermentation begins in concrete and neutral French oak barrels. After primary fermentation, the wine is aged in neutral French oak for eight to ten months before select quantities are blended together for bottling.
