After gentle pressing of whole berries, the Pinot Gris juice is settled for just 24 hours before being racked to neutral French oak barrels for spontaneous fermentation. After fermentation is complete, the wine continues to age in barrel for eight to ten months in order to continue to develop flavor and complexity.
