Winemaker Notes
Hand harvested in the cool morning hours, these grapes are then whole cluster pressed to tank. The juice is cold-settled for 48 hours before moving down to barrels for fermentation. Once in barrel, the juice was inoculated with cultured yeast. The finished wine was aged for eight months with 20% Malolactic fermentation.
