Cabernet Sauvignon - Atlas Peak 2018
The grapes are hand-harvested and gently crushed to retain 50% whole berries. The free-run and press wines were kept separate; the resulting bottled wine is almost entirely from free-run juice. Following fermentation, the wine went through malolactic fermentation in the barrel. The wine was aged in 56% new French oak and the balance in once-used oak barrels for 20 months with minimal racking. The wine received about ten months of bottle aging prior to release.
Cabernet Sauvignon - Howell Mountain 2018
Our 2018 Howell Mountain Cabernet shows dark garnet in color, and a multi-faceted, layered bouquet. We were surprised at how many layers of aromatics we saw in such a young wine: blackberry cobbler, new leather and sweet pipe tobacco, chaparral and sage underbrush. Truly a wine for those who love the savory side of the flavor spectrum! On the palate, again a wonderful mixture of the fruity and savory, we found dark plum, dry persimmon, a dash of cinnamon, and an almost ancient expression of the oak – as in an old attic filled with antique, worn-in wooden furniture. Structurally, the wine has an incredibly creamy texture that tempers the bright acidity, and while this Cabernet does not need a food pairing because of its complexity and balance, it would certainly pair well with almost any meats, stews, casseroles, or even a plate of fine hors d'oeuvres.
Reserve Cabernet Sauvignon - Napa Valley 2018
The 2018 Bell Reserve Cabernet displays a beautiful inky color in the glass. The aroma contains layers of ripe mulberry, hibiscus, pine, forest floor and a hint of pencil shavings. Blueberry compote, cassis and pastry flavors abound on the palate, yielding a wine with long, linear flavors. The finish is very focused, with bright acidity that makes you want to come back for another sip and will pair well with hearty foods. We recommend decanting if you plan to enjoy this soon but expect this wine to age well and develop for more than a decade.
