Arias equally notes that it doesn’t always have to be completely black and white, and that some wineries will use a combination of new and used oak to strike the ideal flavor profile for their wines.

Arias notes that food and wine pairings can be deeply personal, which is why they remain open to interpretation. “There are no hard rules, more like nice suggestions,” he says. However, considering the structure of the grape variety at hand can go a long way. “Due to the high tannins and fuller body of most Cabernet Sauvignon, many gravitate towards meat and richer pairings,” says Arias. Classic Cabernet Sauvignon pairings include steaks, burgers, and hard cheeses, though Arias personally loves venturing off the beaten path and pairing it with certain desserts, such as rich chocolate cake.
