“The Caravina Cabernet Sauvignon has been produced by Seavey for more than twenty years now, and it's absolutely one of my favorite wines. The vineyard itself is on the Seavey estate, and is a very steep and elevated site. This leads to some incredibly well drained soil, lending itself perfectly to Seavey's winemaking style. Every vintage is just a wonderful expression of that little corner of the Valley.“

Winemaking Highlights
Following classic Bordeaux methods, we separately harvest and vinify each vineyard block. Grapes were harvested by hand at night under lights by our vineyard team. In the cool of the early morning, grapes from our 2020 harvest were promptly de-stemmed, and the berries were gently transferred into fermentation tanks to carefully manage the tannins and resulting wine texture.
Fermentation
Fermented on skins using only native yeast for an average of 18 days.
